Sweet Potato Muffins

The sweet potato muffins recipe combines ingredients like butter, sugar, milk, ground nutmeg, vanilla, ground cinnamon, flour, and walnuts.

The recipe is simple and is works for any occasion.

  • 1 1/2 cups sweet potato (1 large or 2 medium sweet potatoes, cut into small cubes)
  • 1 tsp pure vanilla extract
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/3 cup regular butter (or natural butter spread)
  • 3/4 cup white sugar
  • 2 eggs (or equivalent of egg replacer)
  • 1/2 tsp salt
  • 2/3 cup milk (regular or substitute)
  • 3/4 cup walnuts, chopped (optional)


  1. The first thing you need to do is to rinse and peel the sweet potatoes. 

  2. Place them into a large pot, cover the sweet potatoes with water and then bring to a boil for about 30 to 35 minutes or until tender.

  3. When ready, let them cool for a few minutes and then mash. In a large bowl, mix together beat butter, sugar, eggs, vanilla, and milk.

  4. Next, in a different container stir the: flour, baking powder, ground cinnamon, ground nutmeg, and salt.

  5. Add the dry mix to the first bowl and combine the ingredients.

  6. Now, add the mashed sweet potatoes. If you like, add the chopped walnuts and mix well.

  7. Preheat the oven at 350 degrees Fahrenheit (177°C) and grease a 12 muffin pan.

  8. Then, fill each muffin cup only about 2/3 full.

  9. Bake at 350 degrees F for about 25 to 30 minutes.

  10. If you are not sure if muffins are ready, just insert a butter knife into the middle of them and if the knife comes out clean, then it means that they are ready.
