Surprising Sweet Potato Cake

The sweet potato cake recipe combines ingredients like butter, sugar, ground ginger, ground cinnamon, flour.

Also baking soda, baking powder, salt, raisins, and of course, sweet potatoes. The recipe is simple with just a few steps.

Preparation Time: 15 minutes

Cooking Time: 1 hour 10 minutes


  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon (ground)
  • 1/2 tsp ginger (ground)
  • 2 1/4 cups all purpose flour
  • 3 (medium) sweet potatoes
  • 1/2 cup white sugar
  • 3/4 cup brown sugar
  • 1/2 tsp salt
  • 3 eggs (or egg replacer - substitute for 3 eggs)
  • 1/2 cup natural butter spread (or regular butter)
  • 1/2 cup raisins (chopped)
  • virgin coconut oil or butter (for greasing)


  1. First, rinse the sweet potatoes, peel and cut into small cubes.

  2. Place them into a deep pot, cover with water and bring to a boil for about 30 to 35 minutes or until tender.

  3. When the sweet potatoes are ready, drain and mash.

  4. Then preheat the oven to 350°F (177°C) and then grease 2 (9 inch) round baking pans.

  5. In a bowl add the: flour, baking powder, baking soda, ground cinnamon, ground ginger and salt.

  6. In a separate large bowl, mix the mashed sweet potatoes, brown sugar, white sugar and chopped raisins.

  7. Next, add the eggs (or substitute), a bit at a time, to the mashed sweet potatoes mixture and beat a little. Then add the butter and mix.

  8. Add the flour mixture to the large bowl and mix all of the ingredients.

  9. Finally, place the cake mixture into the greased round baking pans and bake for about 35 minutes.


- There is a trick to know if the cake is ready: insert a butter knife in the center of the cake; if it comes out clean, then it is ready. If not, leave it for a couple of minutes in the oven and then check again until it comes out clean.

- If you wish you can frost the cake with your favorite icing.
