Stuffed Baked Potatoes

Stuffed baked potatoes is a very easy recipe to prepare. Broccoli is generally used as a stuffing for potatoes.

Even though this recipe is prepared with broccoli as one of the ingredients, you can feel free to use any vegetable you like.

Here is the recipe below:

       Baked potato with cheese

Preparation Time: 15 minutes

Cooking Time: 1 hour 10 minutes

Servings: 4


  • 4 Russet medium potatoes (double the amounts of the other ingredients if you use the big baking potatoes)
  • extra virgin olive oil
  • 1/2 stick butter
  • 1/2 cup milk
  • 2 1/2 cups of shredded sharp (white) Cheddar cheese
  • 2 heads of broccoli florets blanched in water with salt
  • 1/2 pound of cooked crispy bacon (crumbled)
  • 2 tbsp chives (chopped)
  • ground black pepper (preferably fresh)
  • salt (to taste)


  1. First, preheat the oven to 400 degrees Fahrenheit (204°C). 

  2. Then, bake the potatoes by placing them on a baking sheet. 

  3. Pierce the potato with a fork, about five or six times, then rub the potato with olive oil and season with salt. Place carefully into the oven and bake for about one hour.

  4. When the hour is completed, in a saucepan, heat butter over medium heat and then add the milk, slowly. 

  5. Next, add two cups of the Cheddar cheese and then stir until melted.

  6. Now, remove the sauce from then heat and add the cooked broccoli florets, the crumbled bacon, chopped chives. Then season with salt and ground black pepper to taste.

  7. Take the potatoes out of the oven and make a cut across the top. 

  8. Carefully pour the Cheddar cheese sauce in the middle of the potatoes and then add the broccoli filling. 

  9. Then sprinkle the remaining shredded cheese over the potatoes and put them back into the oven for about two or three additional minutes.
