Sour Cream Potato Salad

The sour cream potato salad recipe is has a lot of flavor. The ingredients are easy to find.

You will need potatoes, salt, mayonnaise, onion, bacon, sour cream and green onions.

Servings: 4 to 6

Ingredients:

  • 5 or 6 medium potatoes
  • 1 small onion (chopped)
  • 1/4 cup green onions (chopped)
  • 3/4 cup sour cream
  • 1/4 cup mayonnaise (regular or vegan mayo)
  • salt (to taste)
  • 4 slices bacon (optional)
  • salt and sugar (to taste)

Directions:

1- First, rinse the potatoes and remove any dark spot that you see.

2- Cut the potatoes in halves.

3- Rinse them again.

4- Put potatoes into a cooking pot and cover with water, add some salt.

5- Boil for about 30 to 40 minutes or until tender.

6- While the potatoes are ready, cook the bacon in a skillet over low-medium heat until it is brown and crispy. When ready, remove the bacon from heat and crumble.

7- Then, when potatoes are ready, drain, peel and cut into small cubes.

8- Next, place potatoes in a separate bowl and add the regular onion, green onions, sour cream, mayonnaise and bacon.

9- Season with some salt to taste.

10- Finally, combine all the ingredients and refrigerate for at least 2 hours.
