Roasted Red Potatoes

One simple recipe that will make you lick your fingers is the roasted red potatoes. They are easy to prepare and their taste makes them worth to be part of any meal. The red type of potatoes is pretty good for roasting due to their low starch content. They are a bit different from Russets as their texture is not as soft. The Russet variety is great for mashing and baking but their high concentration of starch makes them not the preferred alternative for roasting. 

Roasted red potatoes can be cooked in many ways. You can cut them in different shapes, make them crunchy or soft and add flavor with all kinds of seasoning herbs. In this recipe you will see one of several approaches you can use to prepare this scrumptious potato dish.

Preparation Time: 10 minutes

Cooking Time: 45 minutes

Servings: 2 to 3


  • 6 red potatoes (unpeeled)
  • 1/4 cup extra virgin olive oil
  • 1 tsp dried rosemary
  • 1tsp fresh parsley (chopped)
  • 4 garlic cloves (minced)
  • salt (to taste)
  • ground black pepper (to taste)


  1. Begin by preheating the oven to 430°F (221°C).

  2. Cut the potatoes into wedges.

  3. In a small bowl add the olive oil, the rosemary, the parsley and the minced garlic. Mix them well.

  4. Put the potatoes in a fairly large bowl and pour the olive oil mixture over them. Make sure all potatoes get a nice coat.

  5. Use cooking spray to coat the roasting pan where the potatoes are going to be placed.

  6. Transfer the potato wedges from the bowl to the roasting pan. Place the pan in the oven and roast around 45 minutes. 

  7. Check them every 15 minutes or so and turn them if necessary. Make sure each of the wedges get a nice golden color. After the time is up, use a fork to make sure they are tender; if they are not wait a bit more.

  8. As soon as they have the right golden appearance, crispy skin and fluffy insides; they are ready to be taken out of the oven.

  9. Add salt and ground pepper to taste, serve them and enjoy.
