Mexican Potatoes

You won't believe how easy is to make Mexican potatoes. There are all kinds of potato recipes all around the world. Some countries have their own way to give potatoes that unique touch they enjoy so much. In certain places they prefer them saltier while in others a sweeter flavor is more appealing to the palate.

Servings: 4 to 6


  • 5 red potatoes
  • 4 tbsp regular mayonnaise (or vegan mayonnaise)
  • 1 tbsp diced pickled "jalapenos" (jalapeños in Spanish)
  • 2 scallions (sliced)
  • 2 tsp cilantro leaves (finely chopped)
  • salt (optional, to be added when boiling the potatoes)


  1. First, rinse the potatoes under running water and scrub them with a vegetable brush.

  2. Peel the potatoes (optionally) and cut them in small cubes (about 1 inch).

  3. In a deep saucepan, cover the potatoes with water and add a little salt. 

  4. Then boil (medium heat) for about 35 minutes or until tender.

  5. When the potatoes are ready, remove from heat and drain.

  6. In a large bowl, combine all of the ingredients.

  7. Toss and serve.


You could also refrigerate the potatoes for 2 to 4 hours and serve as a cold salad.

Making these potatoes won't take long. The time required for the preparation is very close to 5 minutes so getting them ready to be cooked can be done quickly. The overall time for the cooking process is about 35 minutes which is pretty decent.

The ingredients for the recipe are very flavorful which is exactly what you would expect from a Mexican inspired dish. The potatoes to be used could be of any type although the red ones are ideal due to their consistency.

On the delicacy some jalapenos will be used for that accent that frequently is representative of the country's well known dishes. The scallions, the cilantro and the salt provide the final touch necessary for the success of this appetizing meal.
