Ground Beef and Potato Recipe

The ground beef and potato recipe is very simple to prepare and the result is a meal full of favor. If you're not in the mood of using the oven for making a casserole then the dish is very similar and you can make it just using the stove and some basic ingredients.

In the recipe is mentioned to use waxy potatoes because in the process of combining the ingredients the potatoes will probably break in many small pieces and is better to keep as much of the potato structure as possible by cooking with less starchy varieties.

Ground beef and cream cheese potatoes


  • 3 medium potatoes - suggested varieties: any waxy potatoes (like red potatoes), white potatoes or Yukon gold
  • around 1/2 pound ground beef (lean)
  • 1 1/2 tbsp green onions (chopped)
  • 1/2 cup cream cheese
  • 1/2 tsp dried parsley
  • 1/2 cup chopped tomato
  • 1 tbsp sour cream
  • a pinch of ground black pepper
  • sea salt


  1. Rinse the potatoes and peel them.

  2. Cut the potatoes in about ½ inch (12.7 mm) thick slices and then in pieces.

  3. Then, in a pasta strainer or colander, rinse the potatoes thoroughly with water until it comes clear for this ground beef and potato recipe.

  4. In a saucepan with boiling water add the potatoes, 3 tsp of salt and revolve with a spoon. Cook the potatoes for about 20 minutes, on medium heat, uncovered.

  5. Or you can grease a baking dish with some butter and bake the potato pieces with some salt to taste for 20 minutes as well.

  6. Then take them out, in a plate, and let them cool.

  7. In a stir fry pan or skillet add the lean ground beef, then add ½ tsp of salt and the pepper. Cook on low heat for about 20 minutes while turning and shredding the meat with a fork.

  8. Now you can add over the ground beef: the potatoes, green onions and parsley.

  9. Combine everything and cook on low for 15 minutes.

  10. Add the cream cheese, chopped tomato and the sour cream. (It will get messy but is normal.) 

  11. Carefully combine everything and serve.

Tip: You can serve these potatoes with some green beans at the side (steamed or slightly boiled).
