German Potato Salad Recipe

The German potato salad recipe is very tasty, specially if you are looking for a different alternative to the classic potato salad.

You will need potatoes, bacon, salt, pepper, onion, vinegar, sugar, parsley, and a green pepper. The recipe can be used as a side dish. And it is very easy to prepare.

Cooking Time: 45 minutes

Servings: 4 to 5


  • 4 cups red potatoes
  • 3 slices bacon
  • 1 onion (small, chopped)
  • 1/4 cup vinegar
  • 3 tbsp sugar
  • 1 green pepper (chopped)
  • salt and pepper to taste
  • 1/2 tbsp parsley (finely chopped, optional)


  1. First, rinse the potatoes and remove any dark spot.

  2. Place the potatoes into a pot or deep saucepan, cover with water, then add salt to the water and boil for about 30 minutes or until potatoes are tender.

  3. When ready, drain and let them cool. Then peel and cut into small cubes.

  4. Next, place the bacon in a large pan or skillet and cook over medium heat until it is brown and crispy.

  5. Now, add the onion, green pepper, vinegar, salt, pepper, and sugar to the bacon. (Do not remove the grease of the bacon).

  6. Mix everything well and cook for about 5 to 10 minutes over low-medium heat.

  7. Finally, add the potatoes, and parsley to the skillet, toss all the ingredients gently.

  8. Cook for one more minute over low heat. 

  9. When ready, remove from heat and serve.
