Crockpot Potato Soup Recipe

  • 6 potatoes (peeled and diced) can be red or purple potatoes
  • 1 onion (diced)
  • 1 carrot or your favorite vegetable (peeled and diced)
  • 42 oz chicken stock
  • 1 cup shredded Cheddar cheese
  • 1 cup heavy cream
  • 1/2 cup ham


  1. First, place the potatoes, the onion, the carrot (or your favorite vegetable), ham, and chicken stock in the crockpot.

  2. Then, cover the crockpot and cook for about 8 hours on low heat.

  3. Next, add the shredded Cheddar cheese, ham and the heavy cream.

  4. Cook for about 10 more minutes and serve.

The recommended potatoes for the recipe are the red potatoes due to their waxy texture and hard consistency. The Russet type is not ideal for this dish as they tend to break more easily. Onions and carrots have to be present to provide the needed accent for the soup. The unmistakable flavor of the chicken stock is always good to have on many soups. In addition to the previously mentioned ingredients; the tenderness of the ham is another essential element for the soup. Its saltiness is will enhance the overall taste of this delicacy.
