  • 4 large sized potatoes
  • 1 (15 ounces) can of chili beans (do not drain)
  • 1/4 cup of grated Parmesan cheese
  • extra virgin olive oil
  • salt and pepper to taste
  • sour cream (for topping)


  1. Preheat oven at 375 degrees Fahrenheit (191°C).

  2. Rinse the potatoes under running water, pierce the potatoes with a fork, about six or seven times, rub the potatoes with olive oil and season them with salt.

  3. Bake the potatoes about 1 hour and 30 minutes or until tender.

  4. With a knife, carefully open the potatoes.

  5. Meanwhile, heat the chili beans in a saucepan over medium heat until it's hot.

  6. When the chili beans are ready, just add them to the potatoes.

  7. Sprinkle with Parmesan cheese, salt and pepper.

  8. Finally, add the sour cream on top.

As you start be aware that each of the 4 large potatoes represents a portion to be served so this recipe is basically a meal for four people. Do not forget to pierce the potatoes several times before you start baking them, that way they can get cooked faster and more evenly, plus when the salt is added it can integrate better with the them.
