Easy Cheesy Potato Casserole

The cheesy potato casserole is a good choice if you want to eat something different that tastes good.   • 6 to 8 Russet potatoes (already peeled and diced)
  • 1/4 cup butter
  • 1/2 cup chopped red onion
  • 1 can (around 10 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 3/4 cup shredded Cheddar cheese
  • salt and pepper (to taste)
  • 1 tbsp dried parsley
  • 1 small carrot (shredded, optional)
  • 1/3 cup shredded Cheddar cheese (for topping)


  1. First, in a deep pot, bring to a boil salted water and then add the potatoes.

  2. Cook the potatoes until tender and then drain the water.

  3. Then, heat the butter in a skillet over low-medium heat.

  4. Add the onion and carrot and cook until tender, for about 5 to 10 minutes and then set aside.

  5. Next, preheat oven to 350 degrees F (177°C).

  6. Now, in a baking dish, combine potatoes with the cream of chicken soup, sour cream, onion, carrot, chopped parsley, Cheddar cheese, salt and pepper.

  7. Bake for about 30 minutes.

  8. Sprinkle the remaining 1/3 cup Cheddar cheese over the top and bake it an additional 10 minutes.
