Cheesy Baked Sweet Potatoes

The cheesy baked sweet potatoes recipe is something you are going to love especially if you are a cheese fan. It is quite easy to prepare it and you can bring some cabbage salad that can be added at the side of the plate giving a complementary taste for the palate.

Cooking Time: 45 to 60 minutes

Servings: 4 to 6


  • 4 medium to large sweet potatoes (scrubbed)
  • 2 tsp extra virgin olive oil (or any vegetable oil you have)
  • 6 ounces cream cheese
  • 1/4 cup brown sugar
  • 2 tsp butter or margarine
  • 1 tsp vanilla extract
  • 1/3 cup walnuts


  1. Preheat the oven to 350 degrees Fahrenheit (177°C).

  2. Rub the sweet potato skins with oil, pierce them with a fork, roll in foil and bake in preheated oven for 45 minutes to 1 hour or until tender.

  3. While baking in a large bowl combine the cream cheese, brown sugar, butter and vanilla; set aside.

  4. When the sweet potatoes are baked remove them from foil and slice them in half.

  5. Remove the flesh from the skin and place it in a bowl with the cream cheese mixture.

  6. Carefully try to leave the skin intact.

  7. Mix the sweet potatoes flesh into the cheese mixture and then fold in the walnuts.

  8. Stuff the potato skins with the creamy mixture.

  9. Return to the oven and bake for 5 minutes or until warmed through.
