Having a potato bar is a great idea. It provides your guests a flavorful meal and it’s also a low cost alternative. If you want to offer your guests a selection of toppings to choose from there are other alternatives like shredded beets, turkey or chicken breast(shredded), chopped red onions, sliced olives, shredded carrots, cream cheese, and cubed lean turkey ham.
Also, broccoli, sautéed mushrooms, celery, tomatoes, peppers, and garlic. When shredding the vegetables do it as thinly as possible for easier chewing.

Before setting up the potato bar, be sure to serve toppings in the following order: cold toppings like onions, tomatoes, olives, and peppers, for example, should be prepared and kept refrigerated first. Then, prepare the hot toppings, like bacon, ham, turkey, sauces or stew and keep them hot until serving time.
Don’t serve too much food at once. Serve only what you estimate will be consumed in one hour.
Once toppings are ready to serve, don’t leave them too much time at room temperature. One hour will be more than enough; after that time, discard them before adding fresh toppings again. It’s not recommended putting them back in the refrigerator.
