Why do boiled potatoes lose weight instead of gaining weight?

As gelatinization takes place during boiling, shouldn't potatoes increase in weight instead of losing it?


Answer:

Hello Yuzi,

Boiled potatoes lose weight because even when the gelatinization allows more water to be absorbed into the potato, eventually some of the starch in the potato starts to break down causing the potato to lose weight.
