Which variety of potato is best for chips?

We are planning to have a potato chip production line. We would like to know which variety of potato we should grow knowing that we are based in Saudi Arabia.

If you are planning to have a potato chip production line, there are two varieties you can grow: Yukon Gold or Russet. The Yukon gold variety (or any other variety of yellow potatoes) are considered great for potato chips because they tend to keep their shape when fried.



Russet potatoes can also be used for chips. The Russet variety is very easy to grow and they can represent a more inexpensive alternative, even though Russets are considered to be starchy.

To explain this better, there are two "types" of potatoes: starchy and waxy. Starchy potatoes are perfect for mashing, boiling, and baking. An example of starchy potatoes are the Russet variety.

Waxy potatoes, like Yukon Gold, are great for frying because they tend to keep their shape when fried. Russet potatoes can be used alternatively for potato chips, so you have two great varieties to chose from.
