What is the best potato for pan frying?

I have tried every recipe I can find to make "Fried Potatoes" the way my mother did it in the 60's! I can't get it! I want to fry them in a regular pan (no nonstick).

I have tried covering them and uncovering them! I have tried low heat and high heat! I am thinking it isn't the technique but the variety of potato. Which one is best for "Fried Potatoes"?

Hello,

You can use Yukon gold or russet potatoes, which are more common. To make fried potatoes you must preheat the frying pan with oil for about 5 to 10 minutes. Then place the raw dry sliced potatoes into the frying pan.



When the pan is covered with a regular lid it can create a vapor which can go back to the frying pan and cause a spill. Is better to leave it uncovered.
