What are "new" potatoes?

What type of potato is best for mashed potatoes. Someone told me "new" Potatoes....??

Hi,

New potatoes are potatoes that have been harvested before potatoes reach "maturity". New potatoes are perfect for boiling and roasting.



The facts is that in many places they are hard to find. New potatoes are often called "baby red potatoes", but they are not necessarily the same.

You can buy baby red potatoes in the grocery store. Baby red potatoes are really great to cook mashed potatoes because of their small size and texture. They are also very tasty, too.
