The western

Ingredients:

cup chopped onions
1/2
cup chopped sweet red peppers

tablespoons margarine (or butter)
1 can condensed cream of celery soup (do
not dilute)
1/4
cup milk
1 (4
ounce) can chopped green chilies
1
teaspoon salt
1/8
teaspoon hot pepper sauce
1 cup
shredded cheddar cheese
7 to 8
medium cooked red potatoes
(in cubes)
- Pre-heat oven to 350 degrees.
- Then, grease a 11x7 baking dish.
- Next, saute the sweet red peppers and onions in
butter until tender.
- It's time now to stir in soup, milk, chilies,
salt, and hot pepper sauce and heat through.
- Add 3/4 cup cheese until melted.
- Add the red potatoes and stir to coat.
- Place to a greased baking dish.
- Then, bake, uncovered, for about 20 to 25
minutes.
- Sprinkle with remaining cheese and bake for
about 5 additional minutes or until cheese is melted.
- Remember, let stand 10 minutes before serving.
