Sweet Potato Soup



The sweet potato soup recipe combines ingredients like flour, onions, butter, chicken broth, sweet potatoes, milk, cinnamon, nutmeg, salt, and pepper.

Ingredients:

  • 3 sweet potatoes (large)
  • 1 tbsp all purpose flour
  • 3 tbsp butter (or natural butter spread)
  • 2 1/2 cups chicken broth
  • 1/2 cup chopped onions
  • 1/8 tsp ground cinnamon
  • 1 cup milk (or potato milk, etc.)
  • salt (to taste)
  • ground black pepper
  • 1/8 tsp ground nutmeg (optional)

Directions:

  1. First, rinse the sweet potatoes, peel and cut into cubes.

  2. Place sweet potatoes in a deep saucepan, cover with water and bring to a boil for about 25 to 30 minutes.

  3. When they are cooked in a separate saucepan place the butter, onions, flour and chicken broth.

  4. Cook for about 10 minutes over low-medium heat. Stir in constantly.

  5. Next, add the sweet potatoes and cook for about 5 or 10 more minutes over low heat.

  6. Now, puree the soup in a blender or use a potato masher if you want to do it by hand.

  7. When finished, return to the saucepan and add milk, nutmeg, and cinnamon. Cook for about 5 more minutes over low heat.

  8. Finally, season the soup with salt and pepper to taste.
