Delicious Sweet Potato Salad

The sweet potato salad is great, specially if you are looking for a different alternative to the classic potato salad.

 

 

 
You will need potatoes, one sweet potato, Dijon mustard, cilantro, oil, salt, pepper, onion, and mayonnaise. This recipe of is great as a side dish, too. And it is very easy to prepare. It is healthy and very tasty, too.

 

Cooking Time: 30 minutes

Serving Size: 4 to 6 servings

 

Ingredients:

 
  • 2 large potatoes
  • 1 large sweet potato
  • 1 1/2 teaspoon Dijon mustard
  • 3 tablespoons cilantro (finely chopped)
  • 3 1/3 tablespoons oil (extra virgin coconut oil, extra virgin olive oil or canola oil)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 onion (chopped)
  • 3/4 cup mayonnaise

 

 

  1. First, place potatoes into a saucepan, cover with water, and bring to a boil for about 25 to 30 minutes. When ready, drain, let potatoes cool for a few minutes, then peel and chop.

  2. In a large bowl, combine the potatoes and onion.

  3. In a separate bowl, whisk together the mayonnaise, the Dijon mustard, cilantro, oil, salt and pepper.

  4. Then, add the mixture to the potatoes, and toss very well.

  5. Finally, refrigerate for 3 or 4 hours and serve.
