Sweet Potato
Salad
The sweet potato salad is great, specially if you are looking for a
different alternative to the classic potato salad.
You will need potatoes, one sweet potato, Dijon mustard, cilantro, oil,
salt, pepper, onion, mayonnaise, and eggs. This recipe of is great as a
side dish, too. And it is very easy to prepare. It is healthy and very
tasty, too.
Cooking Time: 30 minutes
Serving Size: 4 to 6 servings
Ingredients:

large potatoes
- 1
large sweet potato
- 1
1/2 teaspoon Dijon mustard
- 3
tablespoons cilantro (finely chopped)
- 3
1/3 tablespoons oil (vegetable, corn or canola oil)
- 1/2
teaspoon salt
- 1/4
teaspoon ground black pepper
- 1/2
onion (chopped)
- 3/4
cup mayonnaise
- 3
eggs
- First, place potatoes into a saucepan, cover
with water, and bring to a boil for about 25 to 30 minutes. When ready,
drain, let potatoes cool for a few minutes, then peel and chop.
- Next, place eggs in a saucepan, cover with
water and bring to a boil for 25 to 30 minutes. When ready, let eggs
stand in water for 10 minutes, then let them cool. Next, peel eggs and
chop finely.
- In a large bowl, combine the potatoes, eggs,
and onion.
- In separate bowl, whisk together the
mayonnaise, the Dijon mustard, cilantro, oil, salt and pepper.
- Then, add the mixture to the potatoes, and toss
very well.
- Finally, refrigerate for 3 or 4 hours and
serve.
