Delicious Sweet Potato Salad

The sweet potato salad is great, specially if you are looking for a different alternative to the classic potato salad.

 

 

 
You will need potatoes, one sweet potato, Dijon mustard, cilantro, oil, salt, pepper, onion, mayonnaise, and eggs. This recipe of is great as a side dish, too. And it is very easy to prepare. It is healthy and very tasty, too.

 

Cooking Time: 30 minutes

Serving Size: 4 to 6 servings

 

Ingredients:

 
  • 2 large potatoes
  • 1 large sweet potato
  • 1 1/2 teaspoon Dijon mustard
  • 3 tablespoons cilantro (finely chopped)
  • 3 1/3 tablespoons oil (vegetable, corn or canola oil)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 onion (chopped)
  • 3/4 cup mayonnaise
  • 3 eggs

 

 

  1. First, place potatoes into a saucepan, cover with water, and bring to a boil for about 25 to 30 minutes. When ready, drain, let potatoes cool for a few minutes, then peel and chop.

  2. Next, place eggs in a saucepan, cover with water and bring to a boil for 25 to 30 minutes. When ready, let eggs stand in water for 10 minutes, then let them cool. Next, peel eggs and chop finely.

  3. In a large bowl, combine the potatoes, eggs, and onion.

  4. In  separate bowl, whisk together the mayonnaise, the Dijon mustard, cilantro, oil, salt and pepper.

  5. Then, add the mixture to the potatoes, and toss very well.

  6. Finally, refrigerate for 3 or 4 hours and serve.
