Sweet Potato Muffins

The sweet potato muffins recipe combines ingredients like butter, sugar, milk, eggs, ground nutmeg, vanilla, ground cinnamon, flour, walnuts, raisins, baking powder, salt, and of course, sweet potatoes.

 

 This recipe is simple and is works for any occasion.

 

Preparation Time: 30 minutes

Cooking Time: 25 to 30 minutes

 

Ingredients:

  • 1/3  cup butter
  • 3/4  cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1 1/2 cups sweet potato (1 large or 2 medium sweet potatoes, cut into small cubes)
  • 3/4 cup walnuts (chopped) (optional)
  • 1/3 cup raisins (optional)
    • The first thing you need to do is to rinse and peel the sweet potatoes. Place them into a large pot, cover the sweet potatoes with water and then bring to a boil for about 30 to 35 minutes or until tender. 
    • When ready, let them cool for a few minutes and then mash. In a large bowl, mix together beat butter, sugar, eggs , vanilla, and milk. 
    • Next, in a separate bowl, combine flour, baking powder, ground cinnamon, ground nutmeg, and salt. 
    • Then, add this mixture to the large bowl and mix all the ingredients well. 
    • Now, add the mashed sweet potatoes. If you like, add chopped walnuts and raisins and mix well. 
    • Preheat the oven at 350 degree F and grease a 12 muffin pan. 
    • Then, fill each muffin cup only about 2/3 full. 
    • Bake at 350 degrees F for about 25 to 30 minutes. 
    • If you are not sure if muffins are ready, just insert a knife into the middle of the muffins and, if the knife comes out clean, then it means muffins are ready.
