Surprising Sweet Potato Cake

The sweet potato cake recipe combines ingredients like butter, sugar, ground ginger, ground cinnamon, flour, baking soda, baking powder, salt, raisins, and of course, sweet potatoes.

 
The recipe is simple with just a few steps.

 

Preparation Time: 15 minutes

Cooking Time: 1  hour and 10 minutes

 


Ingredients:

  • 2 1/4 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  •  3 (medium) sweet potatoes
  • 1/2 cup white sugar
  • 3/4 cup brown sugar
  • egg replacer (substitute for 3 eggs)
  • 1/2 cup natural butter spread or regular butter
  • 1/2 cup raisins (chopped)


    • First, rinse sweet potatoes, peel, and cut into small cubes. Place them into a deep pot, cover with water, and bring to a boil for about 30 to 35 minutes or until tender.

    • When sweet potatoes are ready, drain and mash.

    • Then, preheat oven to 350° F and then grease 2 (9 inch) round baking pans.

    • Now, in a bowl, flour, baking powder, baking soda, ground cinnamon, ground ginger, salt.

    • In a separate large bowl, mix the mashed sweet potatoes, brown sugar, white sugar, and chopped raisins.

    • Next, add the egg substitute at a time to the mashed sweet potatoes mixture and beat a little. Now, add the butter and mix.

    • Add the flour mixture to the large bowl and mix all the ingredients.

    • Finally, place the cake mixture into greased, round baking pans and bake for about 35 minutes. There is a trick to know if the cake is ready: insert a knife in the center of the cake; if it comes out clean, then it is ready. If not, leave it for a couple of minutes and then check again until it comes out clean.

    • Frost with your favorite icing.
