Stuffed Baked Potatoes

Stuffed baked potatoes is a very easy recipe to prepare. Broccoli is generally used as a stuffing for potatoes.

Even though this recipe is prepared with broccoli as one of the ingredients, you can feel free to use any vegetable you like. Here is the recipe below:

Preparation Time: 15 minutes

Cooking Time: 1 hour and 10 minutes

4 servings

 

Ingredients:

4 medium sized potatoes
olive oil
salt
1/2 stick butter
1/4 cup of (all purpose) flour
1/2 cup of milk
 2 1/2 cups of shredded sharp (white) Cheddar cheese
2 heads of broccoli  (florets) blanched in water with salt
1/2 pound of cooked, crispy bacon, (medium dice)
2 tablespoons of chopped chives
ground black pepper (preferably fresh)

 

  • First, preheat oven to 400 degrees F. 

  • Then, bake the potatoes by placing them on a baking sheet. Pierce the potato with a fork, about five or six times, then rub the potato  with olive oil and season with salt. Place carefully into the oven and bake for about one (1) hour.
  • Meanwhile, in a saucepan, combine the flour and butter over medium heat and then add the milk, slowly. Next, add about two (2) cups of the cheddar cheese and then stir until melted. 
  • Now, remove the sauce from then heat and add the cooked broccoli florets, the diced bacon, chopped chives and season with salt and ground black pepper to taste. 
  • As soon as the potatoes are fully baked, make a cut across the top and squeeze it from the bottom. the filling over the top of the potato and sprinkle with the remaining cheddar cheese. Season with ground pepper to taste, and then put it back into the oven for about two or three additional minutes until they are golden brown.
