Russian Potato Salad

The Russian potato salad is a variation of the classic salad. You will need cider vinegar, a carrot, beets, salt, pepper, green peas, scallions, and of course, potatoes. This recipe of is great as a side dish, too. And it takes only a few minutes to prepare. And it is healthy and very tasty, too.

 

 

 

Cooking Time: 20 minutes 

 Serving Size: 4

 

Ingredients:

1/2 cup eggs (hardboiled, chopped)

1 cup potatoes (cooked, diced) (that is, about 4 to 5 medium size potatoes)

1 cup beets (cooked, diced) (or use canned beets)

1 cup green peas (cooked) (or use canned green peas)

1/4 cup carrots (shredded) (or use canned carrots)

1/2 tsp salt

1/2 tsp black ground pepper

1/2 tsp cider vinegar

6 scallions (finely chopped)
 
  • First, rinse and peel potatoes and bring to boil for about 20 minutes or until tender.
     
  •  If you want to prepare the salad fast, use a can of beets, a can of green peas, and a can of carrots.
     
  • Finally, combine all the ingredients in a large bowl.
     
  • Then, cover the bowl and refrigerate for at least 1 or 2 hours.
     
  • Serve over lettuce leaves (this is optional, but the salad will look great.
