Russet potatoes with purple spot just under skin

I bought some organic Russet potatoes. The skin was firm and looked fine though some part with hint of purple. When I cut it open, some part of the potatoes just under the skin was purplish in color.

Are such potatoes still edible?


Answer:

Hello Judy,

The purple tones are probably just bruises from the harvesting or when they where being packaged, etc. Before cooking your Russet potatoes just cut the spots off; but remember that if there is a green color around the potatoes then they shouldn't be cooked at all.
