Roasted Potatoes with Onions

Potatoes and onions: a very tasty combination. The roasted potatoes with onions is a quick recipe to prepare and cook.

Use some potatoes, onion and parsley for a simple meal.


 

After the potatoes are fully cooked they can be served with a bit of light sour cream at the side for an additional touch. 

Perfect when you want to eat something delicious and also healthy.


Here is the recipe below:

 

Preparation Time: 10 minutes

Cooking Time: 30 minutes

4 to 6 servings

 

Ingredients:
 

2 pounds potatoes peeled optionally (cut in quarters or scallops) (Yukon Gold potatoes are a good choice for thPotatoes and onionis recipe) 

salt and ground black pepper to tast

2 tablespoons extra-virgin olive oil

2 tablespoons chopped parsley leaves

1 tablespoon shredded carrot

1 or 2 small onions (finely chopped or in small slices)

 
 

  • First, preheat oven to 400 degrees F. 
  • Then, place the potatoes on a roasting pan or baking sheet and season with salt and pepper. 
  • Next, drizzle the olive oil and sprinkle the parsley, onions and toss the potatoes to coat. 
  • Roast potatoes in the oven (until they are golden and crispy on the outside, and tender and cooked through on the inside) for about 30 minutes.
  • Add some shredded carrot on top.
