Roasted Potatoes with Onions


Potatoes and onions: a very tasty combination. The roasted potatoes with onions is a quick recipe to prepare and cook.

Use some potatoes, onion and parsley for a simple meal.

After the potatoes are fully cooked they can be served with a bit of light sour cream at the side for an additional touch.


Preparation Time: 10 minutes

Cooking Time: 35 minutes

Servings: 4 to 6


Ingredients:Potatoes and onion

  • 5 Yukon gold or red potatoes, cut in quarters or half scallops (peeled optionally)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp chopped parsley leaves
  • 1 tbsp shredded carrot
  • 2 small onions (finely chopped or in small slices)
  • salt (to taste)
  • ground black pepper (to taste)

Directions:

  1. First, preheat the oven to 400 degrees Fahrenheit (204°C).

  2. Put the potatoes on a roasting pan.

  3. Next, drizzle the olive oil and sprinkle the salt, pepper, parsley, onion and toss the potatoes.

  4. Roast potatoes in the oven for about 35 minutes or until they are golden and crispy on the outside and cooked through on the inside.

  5. When serving add some shredded carrot on top.
