Ingredients:
2
pounds potatoes (peeled, cut in quarters) *(Yukon Gold potatoes are a good
choice for this recipe)*
Salt
and ground black pepper to taste
2 tablespoons extra-virgin
olive oil
2 tablespoons chopped parsley
leaves
1 or 2 small onions (finely
chopped) (optional)
- First, preheat oven to 400 degrees F.
- Then, place the potatoes on a roasting pan or baking sheet and season
with salt and pepper.
- Next, drizzle the olive oil and sprinkle the parsley, onions, and toss
the potatoes to coat.
- Roast potatoes in the oven (until they are golden and crispy on the
outside, and tender and cooked through on the inside) for about 30 minutes.
