Simple Recipe for Roasting Baby Potatoes

Cooking Time: 1 hour 24 minutes

Servings: around 2 meals (or about 3 side dishes)



Ingredients

Ingredients:

  • 10 baby potatoes (you can use the Russet, Yukon gold or red potato varieties)
  • 3 tbsp extra virgin olive oil
  • 1/2 tbsp dried rosemary
  • 5 garlic cloves (crushed)
  • a pinch of dried thyme
  • salt (to taste)
  • ground black pepper (to taste)
  • paprika (to taste)

Directions:

  1. Fill a medium sized saucepan with water and let it boil.

  2. Next, rinse the potatoes carefully and place them in the boiling water with some salt. You should let them in the water for around 24 minutes.

  3. Preheat the oven to 425°F (218°C).
  4. Meanwhile, get a small container and add the olive oil, paprika, rosemary, thyme and the crushed garlic. Mix them well.

  5. Remove the potatoes from the water and place them on a large plate. Wait for them to cool off for a bit. Use a masher and press slightly each one of them.

  6. Pour the olive oil mixture over the potatoes. Make sure that each potato gets a nice coat. (You can use a basting brush to make it easier.) Sprinkle with salt and black pepper.

  7. Take a roasting pan (or baking sheet) and grease it. Put all the potatoes over the sheet in organized rows.

  8. Bake them for an hour at 400°F (204°C). Move them around every 20 minutes and check them for a golden appearance. As soon as you confirm the color and the crispy texture is time to take them out of the oven.
