1 pound red potatoes (baby potatoes)
1/4 cup olive oil
Salt and pepper (to taste)
3 cloves garlic (minced)
1 tablespoon Italian Herbs
seasoning
- First, preheat the
oven to 400 degrees F.
- Then, place the
potatoes into a large bowl. In a separate, small bowl, mix the herbs,
garlic, and oil together until blended, and then pour over the
potatoes.
- Next, sprinkle with
salt and pepper and toss to coat.
- Place the potatoes
into a large roasting pan or baking dish, spacing them evenly apart.
- Roast the potatoes
until they are tender and golden, turning them occasionally, for 1
hour.
- *Optional* When
ready, drizzle the roasted potatoes with more olive oil and more
Italian Herbs seasoning, if desired.
