Potato Salad
Recipe
The red potato salad recipe is very popular these days. The ingredients
are very easy to find.
You will need mayonnaise, white vinegar, salt,
ground pepper, sugar, one green bell pepper, onion, olive
oil, red potatoes, and, if you like, Dijon mustard. This recipe of is
great as a side dish, too. And it takes only a few minutes to prepare.

Ingredients:

pounds red potatoes
- 1/2
cup mayonnaise
- 1
tablespoons white vinegar
- 1
teaspoon salt
- 1
teaspoon granulated sugar
- 1/3
teaspoon ground black pepper
- 1
green bell pepper (chopped)
- 1/2
cup onion (minced)
- 1/3
cup extra virgin olive oil
- 1
1/2 tablespoons Dijon mustard (optional)
- First, rinse red potatoes very well and be sure
that potatoes don't have any green spot. Place potatoes in a large
saucepan and cover with water. Bring to a boil for about 25 to 30
minutes, or until potatoes are tender.
- When potatoes are ready, drain and let cool for
10 minutes. You can peel the potatoes if you want, but many people like
to eat potatoes unpeeled.
- Then, cut potatoes into small cubes.
- In a separate bowl , mix all the ingredients,
except the potatoes.
- Next, place potatoes in a large bowl, then add
the mixture of the ingredients to the potatoes and toss for a few
seconds.
- Finally, cover and refrigerate.
