Simple Baked Potato Casserole



The baked potato casserole is a recipe that you should definitely try. You can use it as a special dinner for your family or any special event. Servings: 4 to 6


Ingredients:

  • 5 red potatoes
  • 5 tbsp butter (melted)
  • salt and pepper (to taste)
  • 1/2 cup chicken broth
  • 1/2 onion (chopped)

Directions:

  1. First, preheat oven to 425°F (218°C).

  2. Then peel potatoes and cut in thin slices.

  3. Add the butter to the potatoes, salt and pepper to taste.

  4. Place potato slices evenly in baking dish and add the chicken broth.

  5. Next, cover the baking dish with foil and bake for about 30 minutes.

  6. Finally, uncover and bake for about 30 additional minutes.


The potatoes to be used are the red ones. The reason for picking the red variety is their relatively low starch content. You do not want your potatoes to break down as you prepare the casserole. Cutting the potatoes in slices is very important in order for them to be cooked properly. If you really want your potatoes to have that inviting buttery taste; remember to melt the butter before pouring it. You can do this in a small saucepan or the microwave, either way you are going to love it.

Salt and pepper are always essential for a tasty meal; so add them to your liking but be careful to not over do it. Once all the ingredients have been added pour the chicken broth evenly over the potatoes.
