Potato Broccoli Soup

Ingredients:
1 tablespoon of olive or
vegetable oil
2 cups of 2 medium-size yellow onions, chopped
3 cloves garlic, slivered
2 packages (10 ounces each) frozen broccoli
3 medium-size potatoes (about 1 pound), peeled and cut into cubes
1/8 teaspoon ground nutmeg
5 cups of chicken stock
2 cups of low fat milk
Salt and pepper to taste

- Heat the oil over low heat in a large saucepan.
Then, add the onions and cook, stirring frequently, for five (5) minutes or
until softened. Then add the garlic and cook for about 30 seconds.
- Next, it's time to add the broccoli, the
potatoes, nutmeg, and chicken stock and bring all to a boil over moderate
heat. Adjust the heat, so that the mixture simmers, cover the saucepan, and
cook for about 20 minutes or until the broccoli and potatoes are tender.
- Now, in a food processor (or blender), place the
mixture and puree. Return the puree to the oven, stir in the milk, salt, and
pepper, and set over moderate heat for about four (4) minutes.
- Serve and enjoy.
