Mexican Potatoes

It is a Mexican style salad recipe, referred as Mexican potatoes. 

In that cuisine the tradition is to cook mostly spicy food.

On the recipe jalapenos will be used for that accent that frequently is representative of the country's cultural dishes.


Here is the recipe below:

Preparation Time: 5 minutes

Cooking Time: 25 minutes

4 to 6 servings

 

Ingredients:

2 pounds potatoes
4 tablespoons mayonnaise
1 tablespoon diced pickled "jalapenos" (jalapeņos in Spanish)
2 scallions, (sliced)
2 teaspoons cilantro leaves (finely chopped)

salt (optional, to be added when boiling potatoes)


  • First, rinse the potatoes under running water and scrub them with a vegetable brush.

  • Peel the potatoes and cut them in small cubes (about 1 inch).

  • In a deep saucepan, cover the potatoes with water, add a little salt, and then boil (medium heat) for about 25 minutes or until tender.

  • When potatoes are ready, remove from heat and drain.

  • In a large bowl, combine all ingredients.

  • Toss and serve.
