Mexican Potatoes

 

This is a tasty Mexican style salad recipe, referred as Mexican potatoes. Here is the recipe below:

 

Preparation Time : 5 minutes

Cooking Time :    25 minutes

4 to 6 servings

 

Ingredients:

2 pounds potatoes
4 tablespoons mayonnaise
1 tablespoon diced pickled "jalapenos" 
2 scallions, (sliced)
2 teaspoons cilantro leave (finely chopped)

salt (optional, to be added when boiling potatoes)

 

 

  • First, rinse the potatoes under running water and scrub them with a vegetable brush.
  • Peel the potatoes and cut them in small cubes (about 1 inch).
  • In a deep saucepan, cover the potatoes with water, add a little salt, and then boil (medium heat) for about 25 minutes or until tender.
  • When potatoes are ready, remove from heat and drain.
  • In a large bowl, combine all ingredients
  • Toss and  serve.
