Mexican Potatoes This is a tasty Mexican style
salad recipe, referred as Mexican potatoes. Here is the
recipe below:

minutes 4 to 6 servings
Ingredients:
2 pounds potatoes
4 tablespoons mayonnaise
1 tablespoon diced pickled "jalapenos"
2 scallions, (sliced)
2 teaspoons cilantro leave (finely chopped)
salt (optional, to be added
when boiling potatoes)
- First, rinse the potatoes under running water and scrub them with a
vegetable brush.
- Peel the potatoes and cut them in small cubes (about 1 inch).
- In a deep saucepan, cover the potatoes with water, add a little salt,
and then boil (medium heat) for about 25 minutes or until tender.
- When potatoes are ready, remove from heat and drain.
- In a large bowl, combine all ingredients
- Toss and serve.
