Mashed Potato Pancakes


If you are tired of the same breakfast everyday you should try the mashed potato pancakes. The recipe is an good alternative to the average ones. The pancakes are not only tasty but also easy to make in the morning.

You may be thinking that it could be a tough recipe to make but it cannot be further from the truth. It is without a doubt a very quick dish to prepare with just a few simple steps.


Preparation Time: 5 minutes

Cooking Time: 12 minutes

Servings: 6 to 8


Ingredients:

  • 4 cups boiled mashed potatoes (plain, without any other ingredient)
  • 1/4 cup of all purpose flour (or potato flour)
  • 1 egg (or equivalent in the egg replacer)
  • 1 tbsp brown sugar
  • 1/4 tsp pure vanilla extract

  • pure maple syrup
  • butter

Directions:

  1. Mix the first 5 ingredients together.

  2. You can use an ice cream scoop to pick up the pancake mix and put it on an oiled grill or pan (use some butter or oil to grease it a bit so that the pancakes don't stick to the area where they are going to be cooked).

  3. Cook until a side turns golden brown for about 6 minutes. 

  4. Then turn them over and press the pancakes down.

  5. Cook the other side until it browns for another 6 minutes.

  6. Then you can serve them and pour some maple syrup and a bit of butter on top.

  7. At the side of the pancakes you can add some fresh fruits like strawberries or blueberries.


Fresh blueberries

The preparation time is only a mere 5 minutes, which means very little hassle to deal with. Once everything is set you only need to cook for about 12 minutes and you will have a pretty nice breakfast waiting for you. This is quite convenient especially if you are in a hurry during the morning and want something quick and appetizing.

You only need a few ingredients for this meal and they are very easy to get. You start by using plain mashed potatoes; now keep in mind that you must have already prepared the potatoes before beginning the recipe. They can be kept in the refrigerator for a while, so there is no need to for you to make them the same day you are making the pancakes. Next, just mix the remaining ingredients as indicated by the procedure and you will have mashed potato pancakes.
