Spicy Jalapeno Potatoes

Ingredients:

  • 5 red potatoes (peeled)
  • 2 tbsp diced jalapenos
  • 1 tsp Mexican seasoning
  • 6 dashes Tabasco chipotle pepper sauce
  • 1 scallion (chopped)
  • salt (to taste)

Directions:

  1. First, cut the potatoes in small pieces.

  2. Put the potatoes in a pot or saucepan and add some salt.
  3. Boil the potatoes for about 35 to 40 minutes. 

  4. When ready, remove the potatoes from heat and drain.

  5. Then, combine all of the ingredients in a large bowl.

  6. Finally, put the salad in a glass container and then cover it.

  7. Refrigerate for at least 1 hour.

  8. Serve chilled.
