Hash Brown Potato Casserole

Ingredients:

  • 3 medium Russet baking potatoes (grated)
  • 3 tbsp extra virgin olive oil
  • 1 cup Cheddar cheese (shredded)
  • 1 cup Pepper Jack cheese (shredded)
  • 1 cup fresh spinach (chopped)
  • 1/2 onion (chopped)
  • 6 oz sour cream
  • 1/2 cup regular milk (alternatives: potato, almond or sesame seed milk)
  • 1 tsp garlic salt
  • 1/2 tsp ground black pepper
  • 1/2 tbsp nutritional yeast

Directions:

  1. Heat oven to 350 Fahrenheit degrees (177°C) prior to starting to prepare the dish.

  2. Grease a 9x13 inch baking pan with extra virgin olive oil.

  3. Combine in a mixing bowl the: Pepper Jack cheese, Cheddar cheese, yeast, onion, sour cream, milk, garlic salt, and pepper.

  4. Add the grated potatoes and spinach into the mixture.

  5. Pour the mix into the greased baking pan and carefully spread evenly.

  6. Cover the pan with some aluminum foil and then put it into the oven.

  7. Bake at 350°F for 50 minutes or until the top is light brown.
