Potato Salad Recipe
The German potato salad recipe is very tasty, specially if you are
looking for a different alternative to the classic potato salad.
You will need potatoes, bacon, salt, pepper, onion, eggs, vinegar,
sugar, parsley, and a green pepper. The recipe can be used as a side
dish. And it is very easy to prepare.
Cooking Time: 45 minutes
Serving Size: 6 to 8 servings
Ingredients:

cups potatoes
- 3
slices bacon
- 1
onion (small, chopped)
- 2
eggs (boiled, fully cooked, and sliced)
- 1/4
cup vinegar
- 3
tbsp sugar
- salt
and pepper to taste
- 1/2
tbsp parsley (finely chopped) (optional)
- 1
green pepper (chopped)
- First, rinse potatoes and remove any green or
dark spot. Place the potatoes into a deep saucepan or pot, cover with
water, add some salt to the water, and bring to a boil for about 25 or
30 minutes or until potatoes are tender. When ready, drain and let them
cool. Then peel and cut into small cubes.
- Next, place the bacon in a large pan or skillet
and cook over medium heat until it is brown and crispy.
- Now, add the onion, green pepper, vinegar,
salt, pepper, and sugar to the bacon. (Do not remove the grease of the
bacon). Mix everything well and cook for about 5 to 10 minutes over
low-medium heat.
- Finally, add the potatoes, eggs, and parsley to
the skillet, toss all the ingredients gently, and cook 1 more minute
over low heat. When ready, remove from heat and serve.
