Fried Sweet Potatoes

What about trying this great salad recipe: Fried Sweet Potatoes. It's not only delicious, but believe it or not, it gives a twist to the traditional fries.

 

 

  
The recipe can give from 6 to 8 servings. The preparation time is about 10 minutes.


Cooking Time: 25 minutes

Ingredients:

6 large sweet potatoes
2 tablespoon Salt
5 tablespoons olive oil
6 cloves garlic (chopped)
2 teaspoons thyme leaves (chopped)
1/4 teaspoon red chili flakes
2 tablespoons flat-leaf parsley (chopped)

  • First, place the sweet potatoes in a large saucepan of cold water, add 2 tablespoons of salt and cook until potatoes are tender, but  firm, for about 15 minutes. Then, drain and let cool a little.


  • Next, heat the grill to high. 

  • Now, heat 2 tablespoons of the oil in a small pan on the grates of the grill. Add the garlic, thyme and chili flakes and cook until the garlic is soft, for about 45 seconds and then remove from the heat. 

  • Slice each sweet potato in half (lengthwise), then slice each half into 3 or 4 wedges. Brush the wedges with the remaining 3 tablespoons of oil and season with salt to taste. Grill for about 6 minutes or until lightly golden brown. 

  • Finally, place the sweet potatoes in a separate dish and toss with the garlic mixture and the parsley.
