Easy Cheesy
Potato Casserole
The easy cheesy potato
casserole is a great choice if you want to eat something different and
tasty.
The shredded Cheddar cheese
and potatoes (of course), are the main ingredients for this recipe.

Cooking Time: 40 minutes hour
6 to 8 servings

Ingredients:
6 to 8 Russet
potatoes (already peeled and diced)
1/4 cup butter
1/2 cup chopped
onion
1 (10.75 ounce)
can condensed cream of chicken soup
1/2 cup sour
cream
3/4 cup
shredded Cheddar Cheese
salt and pepper
(to taste) (or about 1/8 teaspoon pepper and salt)
1 tablespoon
minced parsley
1 small carrot
(shredded) (optional)
1/3 cup
shredded Cheddar cheese (for topping)
- First, in a deep pot, bring to a boil salted
water and then add the potatoes. Cook the potatoes until tender and
then drain the water.
- Then, heat the butter in a skillet over
low-medium heat. Add the onion and carrot and cook until
tender, for about 5 to 10 minutes. and then set aside.
- Next, preheat oven to 350 degrees F (175
degrees C).
- Now, in a baking dish, combine potatoes with
the cream of chicken soup, sour cream, the onion, carrot, chopped
parsley, cheddar cheese, salt and pepper. Bake for about 30 minutes.
- Sprinkle with remaining 1/3 cup cheddar cheese
over top and bake for about additional 10 minutes.
