Easy Cheesy Potato Casserole


The cheesy potato casserole is a good choice if you want to eat something different that tastes good. This casserole can be prepared with minimal effort but the results can be quite surprising for such a simple recipe. The steps required to prepare the food before cooking can take several minutes, however, one of the main advantages of the dish is the fairly short cooking time.

Only 40 minutes are necessary to cook the recipe while many potato based dishes can take from approximately 1 hour to several hours depending on the specific method used to cook the meal.

Ingredients:

Casserole

  • 6 to 8 Russet potatoes (already peeled and diced)
  • 1/4 cup butter
  • 1/2 cup chopped red onion
  • 1 can (around 10 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 3/4 cup shredded Cheddar cheese
  • salt and pepper (to taste)
  • 1 tbsp dried parsley
  • 1 small carrot (shredded, optional)
  • 1/3 cup shredded Cheddar cheese (for topping)

Directions:

  1. First, in a deep pot, bring to a boil salted water and then add the potatoes.

  2. Cook the potatoes until tender and then drain the water.

  3. Then, heat the butter in a skillet over low-medium heat.

  4. Add the onion and carrot and cook until tender, for about 5 to 10 minutes and then set aside.

  5. Next, preheat oven to 350 degrees F (177°C).

  6. Now, in a baking dish, combine potatoes with the cream of chicken soup, sour cream, onion, carrot, chopped parsley, Cheddar cheese, salt and pepper.

  7. Bake for about 30 minutes.

  8. Sprinkle the remaining 1/3 cup Cheddar cheese over the top and bake it an additional 10 minutes.


The main ingredients for the recipe are of course the potatoes and the Cheddar cheese; the remaining ones are used to add extra flavor to this succulent dish. The onion, the condensed cream and the carrots when mixed with the potatoes create a contrast between the distinct savors that can be appreciated by those who are fortunate to taste this delightful cheesy potato casserole recipe.
