Cauliflower Mashed Potatoes



The cauliflower mashed potatoes is one of those recipes that can dazzle you because of its unexpected taste. This is not a typical dish but you can be sure you are going to like it if you give it a chance. At first glance this might seem like a difficult recipe to make; however, it couldn’t be farther from the truth. It doesn’t require many ingredients and the procedure is only a few steps.

The preparation stage only takes about 10 minutes, which is quite convenient if you are in a hurry. The cooking time is pretty impressive as well, as it only takes about 30 minutes for the dish to be ready. The brief time needed to cook the cauliflower mashed potatoes makes them an even more tempting delicacy to prepare. You can surprise your friends and relatives with this easy original potato meal.

Ingredients:

Cauliflower mashed potatoes

  • 3 large potatoes (Russet, Yukon gold or any other starchy types)
  • 2 cups cauliflower florets (chopped into 1” pieces)
  • 3 tbsp butter
  • 1/4 cup of milk
  • 1/2 tsp salt
  • pepper (to taste)
  • paprika (to taste)

Directions:

  1. First, peel the potatoes and chop them into 1” pieces.

  2. Next, fill a large pot with water and heat it until it boils. Once boiling, add the potatoes to the water and a pinch of salt (you can use a bit more salt if you prefer).

  3. Cook for around 30 minutes and check them with a fork; if they are tender you can turn the heat off. Now, around 8 minutes before the potatoes are done; add the cauliflower. The reason for this is to make sure both of them are done simultaneously.

  4. Once the potatoes and the cauliflower are ready; drain the pot. After the pot has been drained; put the pot back on the same burner but in the off position. The remaining heat should be more than enough to dry both the potatoes and the cauliflower. The drying process may take around 2 minutes.

  5. At this point add the butter, the milk, the 1/2 tsp of salt and the pepper to the pot. Once everything has been added; is time to mash the mix. You can use a traditional potato masher or a blender if you like. Mash them as much as you can until they have the texture you want.

  6. Add any salt and pepper if needed; you can also throw some extra milk and butter.

  7. Finally you can sprinkle some paprika over the cauliflower mashed potatoes to provide an unique final touch.

This potato recipe is something else, as the cauliflower florets and the potatoes get together you will wonder why you didn't make the dish before. Salt is a must for these mashed potatoes; nevertheless, the addition of pepper and paprika is completely optional.
