Blue Cheese Potato Salad

The blue cheese potato salad recipe is very tasty. The ingredients are easy to find, as they are things that are already in the house.


You will need white vinegar, salt, pepper, mayonnaise, blue cheese, green onions, olive oil, bacon, red potatoes, sour cream, and, if you like, Dijon mustard.

The recipe is great as a side dish, too.


Cooking Time: 40 minutes

Servings: 6 to 8

Ingredients:

  • 7 red potatoes (baby potatoes)
  • 4 ounces blue cheese (crumbled)
  • 1 cup mayonnaise (regular or vegan)
  • 3/4 cup sour cream
  • 2 tbsp Dijon mustard
  • 2 tbsp white vinegar
  • 1/4 cup extra virgin olive oil
  • 3 green onions (chopped)
  • 3 slices bacon (optional)
  • salt and pepper (to taste)

Directions:

  1. First, cook bacon over medium heat until it is brown and crispy.

  2. When the bacon is ready, let it cool for a few minutes and then crumble.

  3. Rinse the potatoes, remove any green or dark spot and place in a large pot with salted water. (Remember to add enough water to cover the potatoes.)

  4. Now, bring to boil.

  5. Cook for about 20 to 25 minutes or until potatoes are tender.

  6. When the potatoes are ready drain and let them cool for a few minutes.

  7. You can peel the potatoes if you don't want to eat the skin. Then, cut into small cubes.

  8. Next, in a large bowl, mix all the ingredients.

  9. Add the potatoes to the mixture and toss gently.

  10. Finally, cover and refrigerate for at least 4 hours.
