Potato Salad

The blue cheese potato salad recipe is very tasty. The ingredients are
very easy to find.
You will need white vinegar, salt, pepper,
mayonnaise, blue cheese, green onions, olive oil, bacon, red
potatoes, sour cream, and, if you like, Dijon mustard. This
recipe of is great as a side dish, too.
Cooking Time: 40 minutes
Serving Size: 6 to 8 servings
Ingredients:

pounds red new potatoes
- Salt
and pepper to taste
- 1
cup mayonnaise
- 3/4
cup sour cream
- 2
tbsp Dijon mustard
- 2
tbsp white vinegar
- 4
ounces blue cheese (crumbled)
- 3
green onions (chopped)
- 3
slices bacon
- 1/4
cup olive oil
- First, cook bacon over medium heat until it is
brown and crispy. When bacon is ready, let it cool for a few minutes
and then crumble.
- While
bacon is cooking, rinse potatoes, remove any green or dark spot, and
place in a large pot with salted water. (Remember to add
enough
water to cover the potatoes) Now, bring to boil. Cook for about 20 to
25 minutes or until potatoes are tender.
- When potatoes are ready drain and let them cool
for a few minutes. You can peel the potatoes if you don't want to eat
the skin. Then, cut into small cubes.
- Next, in a large bowl, mix all the ingredients.
- Add the potatoes to the mixture and toss gently.
- Finally, cover and refrigerate for at least 1
hour.
