Best potato for wafer thin curly deep frying

I want to deep fry, and in the process that the potato maintains its wafer thin curls.

You can use some yellow potatoes, like the Yukon gold potatoes for deep frying. They are widely used in a variety of cooking methods.



Be sure that the potatoes are completely dry before getting them into the thin curls. Remember to heat the fryer a few minutes prior carefully deep frying the potato curls.
