I will be baking 50 potatoes of medium size in a convection oven. I will be baking them the morning of the planned event. I would like to know how to keep them warm when I get them to the venue. There is a regular oven there.
Should I leave them slightly underdone? I do not intend to wrap them. How can I prevent them from becoming wrinkled or too crunchy on the outside. The time they will need to be kept warm is from 8AM until noon.

You can bake the potatoes as usual. Just put the potatoes in the oven at 180 degrees F (82° C) as soon as you arrive. This temperature should keep the potatoes warm without overcooking them.
If you think that you will need to keep potatoes warm for more than 4 hours, you can leave them "slightly underdone", as you mentioned before.
Important: do not cover the potatoes. Hope this helps.
