Baked potatoes

I will be baking 50 potatoes of medium size in a convection oven. I will be baking them the morning of the planned event. I would like to know how to keep them warm when I get them to the venue. There is a regular oven there.

Should I leave them slightly underdone? I do not intend to wrap them. How can I prevent them from becoming wrinkled or too crunchy on the outside. The time they will need to be kept warm is from 8AM until noon.

Answer :

Hi,

You can bake the potatoes as usual. Just put the potatoes in the oven at 180 degrees F as soon as you arrive. This temperature should keep the potatoes warm without overcooking them.



If you think that you will need to keep potatoes warm for more than 4 hours, you can leave them "slightly underdone", as you mentioned before. Important: do not cover or wrap the potatoes. Hope this helps.
