Ingredients:
1/3 cup potato starch
cooking spray
1 1/2 cups potato flour
1 1/2
tsp of baking powder
1 tsp
salt
1 3/4
cups sugar
1/2 cup egg replacer mix

tbsp softened butter
3/4
cup potato milk

tbsp
bourbon
1/4
cup half and half
1
tbsp
vanilla extract
Procedure:
1- Preheat your oven to 350 degrees Fahrenheit.
2- As the oven is heating you are going to want to
use the cooking spray to lightly cover your cupcake cups.
3- From there add the flour, baking powder, salt
and potato starch to a mixing bowl.

Take care to ensure that you are measuring properly. Once you have
added all of the ingredients to the bowl you will want to combine them
with a whisk.
5- In a separate bowl you are going to
combine the sugar and butter with a mixer at a medium speed until the
mixture appears light and fluffy.
6- Add in the egg replacer, ensure that is fully beaten.
7- Next you need to combine the half and half and
milk.

Once that has been done you will take the milk mixture and the flour
mixture so that you can alternate adding it into the butter
mixture.
9- Be sure that you start and end with the flour
mixture.
10- After that mixture is combined fold in the
vanilla and bourbon.
11- Once fully mixed take the batter and divide it
evenly into your cups.
12- Finally place the cupcake cups into the oven
for approximately 18 minutes.
These
creative baby shower cupcakes are delicious, but how you top them is
really how
you make
them festive. Give some thought to the color scheme of your party, and
think about if there is a way to incorporate that into your cupcakes
design.
For example, if you are throwing a shower
in white and pink you may want to use those colors to ice your cupcakes
with. Additionally, be creative in how you top those cupcakes. You use
marshmallows or some other sort of soft candy to top them. You also use
some inexpensive baby decor for the main table that can be found at
your nearest craft
or dollar store.
