Answer:

Hello J Dosal,

There are some potato varieties with a low starch content, also called waxy potatoes.



Low starch potatoes are appropriate when preparing salads, boiling and soups. The texture is basically rigid, meaning that they keep the shape after being cooked. That is why they are not ideal for mashing purposes.

Some varieties with low starch are the red, white and fingerling potatoes.
