Are potato sprouts poison?

I read some where that potato sprouts are poisonous; is that true? If so, is a potato with sprouts poisonous?

Answer :

Hello Carole,

Potato sprouts are toxic (poisonous), not edible. This is because sprouts produce a chemical called "solanine" , which is toxic if you eat it. If a potato has sprouts just cut them off and, if the rest of the potato is fine, then you can cook and eat the potato.

But again, remember to cut the sprouts off.
